Ingredients for Healthy Christmas cookies

  1. Needed : Almond cookie dough for Linzer cookies.

  2. Prepare 2 cups : Almond flour.

  3. Prepare 1/2 cup : Maple syrup.

  4. Needed 1-2 tbsp : Coconut oil.

  5. Prepare 1 tsp : Vanilla extract.

  6. Prepare : Red Velvet Almond cookies.

  7. Prepare : Almond cookie dough.

  8. Needed 2 tsp : Raw Beetroot powder.

  9. Needed : Melted White chocolate/Thick coconut milk to drizzle.

  10. Prepare : Plain Almond Chocolate cookies.

  11. Needed : Almond cookie dough.

  12. Prepare : Melted Dark chocolate to drizzle.

  13. Needed : Chocolate Peppermint Brownie cookies.

  14. Needed 1/4 cup : Maple syrup.

  15. Needed 1/3 cup : Unsweetened Apple sauce.

  16. Needed 1/2-1 tsp : Peppermint extract.

  17. Needed 1/2 cup : Creamy Unsalted Peanut Butter.

  18. Prepare 1 tsp : Baking powder.

  19. Prepare 1/3 cup : Unsweetened Cocoa powder.

  20. Prepare 1/3 cup : Oats flour/powder.

  21. Prepare 2-4 tbsp : Coconut sugar.

  22. Prepare : Chopped Nuts topping (Pistachios & Cashews).

Process Cooking Healthy Christmas cookies

  2. Mix all the ingredients given under Almond flour dough. Make a dough & freeze it..

  3. Cut out desired shape with cookie cutter. First I made 18 Almond cookies. Took couple of cookies for making jam cookies. So plan it accordingly as you need. Set aside the cut out part.

  4. Add Beetroot powder to the extras of the dough. Mix well. Roll out & cut cookies of desired shapes..

  5. Bake the cookies at 350F for 12 to 15 mins in preheated oven..

  6. Once done, remove from oven. Let it cool. Apply jam & overlay the cookies with holes on each other to make Linzer/Jam cookies..

  7. Drizzle melted White Chocolate/Dark Chocolate on the beetroot & remaining Almond cookies. Store it in a airtight container..

  8. For Peppermint Brownie, mix all the ingredients given under it at once. Adjust Sugar according to taste. Rest it for 5 mins..

  9. The dough will be thick and slightly sticky. Wet hands to handle sticky dough. Divide it to 8 parts & place it over lined cookie sheet. Add 2 tbsp dough for single cookie..

  10. Bake in the preheated oven @350 for 12 mins. Remove from oven. Press chopped nuts of choice when hot for easy set. It may seem undone but upon cooling it reaches perfect texture..
